Because corn isn’t just a side dish. It’s a big chunk of America’s agricultural economy, and it’s important to know the truth before making important policy decisions. For instance, only 1 percent of the crop is actually eaten as a vegetable. As for the rest, half the corn we grow goes to feeding cows, pigs and chickens. Without it, a slice of bacon or a chicken thigh would be much scarcer and more expensive. We export a fifth of our corn, most of which also goes to feed animals, for an almost $13 billion trade surplus, one of the few U.S. products to run a surplus. A quarter of the crop goes to ethanol. The rest goes into food as corn starch, sweeteners and other products such as chemicals, fibers and plastics.
